Yam Salad with Lime, Cayenne, and Ginger

Grate 2 large yams.


juice of 2 limes

1/4 c. canola oil

1″ piece of fresh ginger, FINELY chopped

1 dried cayenne pepper, with or without seeds to taste, snipped in tiny bits

1/2 c. flat-leaf parsley, finely chopped

Stir and let flavors meld.
